Συνταγές που προλαβαίνεις να φτιάξεις για την Παραμονή Πρωτοχρονιάς-- A sexy chicken, a comfort soup and an elegant dessert! All for you Santa!

Sexy Chicken recipe

1 big fat chicken
1sack pre cooked chestnuts
10  dry plums
250 gr chicken livers
1 1/2 kgr baby potatoes
1 tablespoon butter
1 handful pine nuts
500gr beef mince
200 gr Greek Gruivere cheese
5 garlic cloves, unpeeled
 a pinch of sugar
 salt to taste
 half cup of Greek olive oil
 some oregano, fresh or dry
1 glass of tomato juice
2 medium onions cut in cubes
1 cinammon stick
5 alspice
1 bay leaf
 fresh ground pepper
1 glass of red semi sweet wine



Season the chicken with salt and pepper inside out. Leave aside.

Make the mince. Saute the onions in olive oil, add the mince and saute some more until it turns pale, add the tomato juice, the sugar, the spices and some salt and pepper to taste. Low the temprature in medium/ low, add some water until the mince is slightly covered and let it cook until ready (about half an hour).

Mix together the mince mix with the chicken livers, the chestunts, the pine nuts, the plums and the cheese. Fill the chicken with the mixture and if there is enough mince mixture, spread some around the stuffed chicken. Lay the baby potatoes here and there, the garlic cloves, some olive oil, season and pour in the wine. Splash some water until the liquids are almost half the hight of the potatoes. Bake in pre-heated oven in medium/high temperature until the chicken is fully cooked (bones reviles).
 
 
 
 
CARAMELIZED CHOUX PASTRY FILLED WITH LEMON CURD AKA SANTA'S BREAKFAST!


FOR THE CHOUX PASTRY

one cup of water
one cup of all purpose flour
75 gr of butter, room temperature
4 eggs
a pinch of salt


2 cups of sugar or honey
store bought lemon curd


In a sauce pan, boil together the water, the butter and the salt. Once boiled, pour in the cup of flour, all at once. Whisk until you have a good dough. Remove from heat. Let it cool for about 5 minutes and add the eggs, one at a time, , while you whisk vigorously. Let it cool. Fill a pastry bag and pip some choux on a tray covered with parchment paper. Leave room between each choux, because they will double their size. Bake at 200 C degrees for 10 minutes, then low the temperature at 180 until golden brown. Let them cool before you try to remove them.
If you wanna fill them with store bought lemon curd just open a hole in the bottom of each choux and when cooled, fill a pastry bag with the lemon curd and pip lemon curd in. Othewise, you can just cut them in half and spread some lemon curd.

Make the syrup

Heat 2 cups of sugar until you have a thick caramel. Pour some over the choux pastry when filled and cooled. Otherwise you can drizzle them with honey.
 
 
Celeriac soup with wine and Gruyère cheese
 
for 4-6 persons

One medium celeriac, peeled and roughly chopped
2 medium carrots, peeled and roughly chopped
3 potatoes,  peeled and roughly chopped
One yellow onion, peeled and roughly chopped
one red bell pepper, roughly chopped
one glass of white wine
salt and pepper to taste
some dry of fress oregano
half cup of olive oil
grated Gruyère cheese
 
Throw all the veggies in a large casserole with the olive oil, season and add the oregano. Saute for some minutes and pour the wine in. Let it reduce for some seconds while you stir the veggies. Add enough water to cover the vegetables and let them cook gently. When all the veggies are soft, mash them in a food processor to have a thick soup. Add the cheese in or sprinle some when served.

Το πόσο έχω ταλαιπωρηθεί τους τελευταίους μήνες, είναι απερίγραπτο. Παρ' όλα αυτά, θέλω τόσο πολύ να δω φίλους (που έχουν να με δουν από το καλοκαίρι), να μαγειρέψουμε και να μαζευτούμε γύρω από ένα όμορφα στολισμένο τραπέζι, να πιούμε και να χαλαρώσουμε... Και να φάμε, ναι. Αν και αυτό μας έχει καταστρέψει, αλλά τέλος πάντων. Ας ελπίσουμε οτι θα τα καταφέρω και όλο και κάποιον άνθρωπο θα δω! Εσείς; Πού θα κάνετε ρεβεγιόν;

Pin pin! - Who's there? - Pinterest. Πιν από το πινέζα.

Καλή εβδομάδα φίλοι μου! Είμαστε μία εβδομάδα και κάτι ψηλά πριν τα Χριστούγεννα, και λίγες μέρες πριν αλλάξει και αυτός ο χρόνος και μεγαλώσουμε πάλι όλοι. Και να μην θες δηλαδή, αυτή η Πρωτοχρονιά, μαζί με τα καμπανάκια από το έλκηθρο του Άγιου Βασίλη σου χτυπάει και όλα τα άλλα καμπανάκια, ιδίως τα ηλικιακά... Πάντως, τις γιορτές τις έχω συνδέσει με τόσο όμορφα πράγματα, ιδίως τα Χριστούγεννα, που ποτέ δε με αφήνουν αδιάφορη. Βέβαια, τον καιρό εκείνο που ήμουν κι εγώ παιδί, είχαμε κανονικές εποχές, με κανονικό χειμώνα και κανονικά Χριστούγεννα με χιόνια. Και μιας και όλοι μας είμαστε αναγκασμένοι να ζούμε με την απόλυτη κάπνα ούτως ή άλλως, μου επιτρέπετε να ευχηθώ λευκά Χριστούγεννα έτσι; 
Σήμερα, έχω ανεβάσει μερικές εικόνες από τα like μου στο pinterest. Τα like μου τελικά, είναι περισσότερα από τα Pin μου! Στα like, έχω αυτά που θέλω να αντιγράψω με την πρώτη ευκαιρία. Αν δηλαδή έχω ποτέ την δυνατότητα να επέμβω σε κάποιο σπίτι, νομίζω το πρώτο που θα άλλαζα θα ήταν τα πατώματα. Και μετά την κουζίνα. Ωδή στο ξύλο και στα λευκά πατώματα που είναι τόσο μα τόσο σικ, σαν τα λευκά σεντόνια που είναι συνώνυμο της καθαριότητας.  Δείτε πως ένα λευκό πάτωμα χωρίς κανένα άλλο χρώμα τριγύρω, αναδεικνύει το θέμα του, στην προκειμένη το κρεβάτι (φωτό πάνω). Όσο για την φωτό ακριβώς από κάτω, εκτός από τα σιδερένια επιπλάκια (που πολύ δύσκολα θα τα συναντούσες σε εσωτερικό ελληνικού σπιτιού), αυτό που κλέβει την παράσταση είναι φυσικά το υπέροχο παράθυρο. Φό-βε-ρο.



                 


Hello my friends! Did you have a nice weekend? I spent it making Christmas menus for my friends, because i am planning on making a big festive dinner during the holidays! Anyway, i haven't decided yet i am either gonna cook stuffed turkey again or another poultry, but i am gonna make lots of pies and sweets. At least i hope i will!

Today i gather some of my favorite likes on Pinterest, which usually are related to decoration and DIY. These eye candy photos are some of them! Yeah, i know, they are totally girly! BUT... A girl's got to do what a girl's got to do: Make plans and pin awesome stuff!


































Ποτέ δε θα τολμούσα να βάλω (για ευνόητους πρακτικούς λόγους) ταπετσαρία και μάλιστα μια τέτοια ταπετσαρία σε μπάνιο. Αλλά, αν και εσείς έχετε δίχωρο μπάνιο, ή έστω μιας κάποιας μορφής μοντέρνο πλυσταριό, δείτε πως μπορεί να μεταμορφωθεί σε κουκλίστικο, με μικρές χαριτωμένες παρεμβάσεις.

Όσο για το ξύλινο σπιτάκι παρακάτω, εντάξει δεν έχω λόγια. Ζούσα σε κάτι τέτοιο και ας ήταν 30 τετραγωνικά. Δηλαδή, είναι τόσο μα τόσο όμορφο και προσεγμένο, που μοιάζει με ζαχαρωτό! Αν έχεις κάποιο σπίτι, τύπου εξοχικό, ξύλινο ή όχι, δες πόσο όμορφο μπορείς να το κάνεις με μια χρωματιστή ζαρντινιέρα ας πούμε, ή με μια κουρτίνα κομμένη σε λωρίδες όπως η κίτρινη!



Για το τέλος άφησα αυτόν τον πράσινο φιστικί τοίχο. Με όλα τα παστέλ παραταγμένα. Γιατί μια κουζίνα μπορεί να είναι και να δείχνει το πιο όμορφο σημείο του σπιτιού.

Μπιφτέκι, ντάκος και τσαπατσούλικο γλυκό -- One post, 3 divine recipes to try out!

Αυτό το ποστ μου έχει δημοσιευθεί στη στήλη μου WTF (WHERE'S THE FOOD) στο Popaganda.gr. Πρόκειται για τα πιο αφράτα μπιφτέκια ever, έναν πειραγμένο ντάκο και ένα γρήγορο γλυκάκι με μαρέγκα, τζιαντούγια και καραμελωμένα κουμ κουάτ.

Wanna try the most moist and airy burgers? An elegant twist to an original delicious Greek Dakos salad? Or something easy to make, for the sweetooth friends of yours?

Ok here we are.

For the burgers

serves 4

500 gr mince (half lamb, half veal)
1 medium onion, minced
some chopped parsley
3 tablespoons Greek yogurt
1 tablespoon baking soda
2 tablespoons walnuts, powdered
salt and pepper to taste
some dry oregano

Mix all the ingredients and put them in the refrigerator over night or at least for 2 hours. Make paties, spray them with some olive oil and grill them for 15 min. While baking turn them upside down one time. That's it. Serve them with a salad or fries.
 

For the Dakos salad

for each glass you will need

1/2 of a large round barley rusk
1  tablespoon of feta cheese or fresh myzithra, crumbled or grated
4-5 baked mini pomodori tomatoes cut lengthwise (baked in 200 C degrees until soft)

for the salad dressing
3 parts olive oil/ one part balsamic vinegar/ 1 part grape molasses

Run the rusk under a spray of water (about 4-6 tablespoons) to moisten. Put the crumbled cheese on. Add some oregano. Place the baked tomatoes on top. Sprinkle with the salad dressing.


For the Gianduja Kum Quat Meringue

For the meringue base

4 old egg whites, room temperature
1 cup granulated sugar
two drops vanilla extract
some lemon drops

Beat the egg whites until fluffy. Add a tablespoon of sugar a time. Make sure it dissolves. Add the vanillas and some lemon drops. Pour the meringue over an oven pan covered with parchment paper. Bake at LOW temperature (80 C) for 3 hours. Turn the temperature off and leave the meringue in, for one more hour. Make sure the oven door is a bit open. Take it off the oven and let it cool completely.

Buy a good Gianduja chocolate

Cut in pieces the chocolate and melt it using bain marie teqchnique. Keep warm.

Bake some nuts, unsalted nuts such as hazelnuts until golden. Crush them in pieces when cold enough to handle.

Make a light syrup using 2 cups of sugar and 1 1/2 cup of water. Throw  some fruits of your choice in (i used kum quat), when it reaches the boiling point. Low the temperature and shimmer for 4 minutes. Take the fruits off the syrup.

Pour the melted chocolate over the meringue base, add some baked and crushed hazelnuts on top , and place here and there, the caramelized fruits. Use your hands to eat it, it's more fun this way.

HO - HO - HO! Χριστουγεννιάτικη ατμόσφαιρα


Στολίσατε; Μπήκατε στο πνεύμα των Χριστουγέννων ή ακόμα; Αν και μοιάζει λίγο αφύσικο να γιορτάζεις για οτιδήποτε σε αυτή τη χώρα που ζούμε, νομίζω οτι τα Χριστούγεννα ΠΡΕΠΕΙ να κάνουμε μια παύση. Στο μυαλό μας πρώτα απ΄όλα. Και να επιτρέψουμε στον εαυτό μας, να θυμηθεί λίγο την μαγεία των παιδικών μας χρόνων. Επιβάλλεται.
Σε ό,τι αφορά σε αυτό το υπέροχο σπίτι, κάντε κλίκ στις φωτογραφίες, για να τις δείτε ολόκληρες, σε όλο τους το μεγαλείο.
